The Jonathan apple makes a brightly acidic cider full of delicate apple aromatics. A challenging apple to process, Jonathan continues in the line-up as a favorite of our cider makers. A minimal Montana beet sugar addition results in a dry cider that highlights the apple.

Fermented with a blend of French and English cider varieties sourced from Oregon. These apples contain tannins that offer a more wine-like, less fruity cider. Aged in Chardonnay barrels to complement the cider and minimally sweetened to highlight the apple and barrel.

Newtown Pippin

The Newtown Pippin is an old apple, grown by founding fathers George Washington, Thomas Jefferson and Ben Franklin, for cider making. The apple has a high sugar and acid content and imparts woody and earthy flavors in the finished cider.

Karmijn de sonnaville

The Karmijn apple is a favorite at the cider mill. The sugar rich, high-acid apple imparts tropical fruit notes to the cider akin to the fruity profile of newer hop varieties popular with brewers. A minimal Montana beet sugar addition balances this dry cider.
